Honeymink's Salmon Terkiyaki
This is a very quick and easy protein packed dinner. You need salmon fillets and either readymade teriyaki sauce or soy sauce, mirin and sugar. (To make the teriyaki sauce yourself, pour a few tablespoons of soy sauce in a small bowl, pour in a bit of mirin and stir in some sugar.)
Put the grill on quite high.
Cover the fillets with the sauce.
Put them under the grill and cook on both sides til the teriyaki bubbles and caramelises.
That's it!
Takes about 15 minutes and is great with steamed mange toutes and brown rice.
Laurie Leman's Piquant Ranch Salsa
Serve 1ml per person. Each serving contains 22 calories
1 1/2 tomatoes, diced
50ml (2fl oz) low-sodium V8 Vegetable juice
2 chopped spring onions
2 tbsp chopped red onion
1 tbsp lemon or lime juice
1 tbsp chopped fresh coriander
1 medium jalapeno chilli, finely chopped, or 1/2 tsp dried chilli powder
1 large clove garlic, crushed
freshly ground black pepper Combine all ingredients in a medium-sized bowl. Season and refrigerate to allow flavour to develop. Leave for one hour at room temperature before serving. Serve with tortilla chips and guacamole or as a spicy dressing.
Dougee's Banana Yumm Cake
4 ounces of margarine
2 ounces of brown sugar
2 eggs (free range)
4 ounces of flour
2 teaspoons baking powder
4 bananas(preferably ones on the way out, brown or black is fine
as the flavours are enhanced)
1 pinch of mixed spice or cinnamon (if you want to or even a bit of vanilla extract, or even walnuts if you feel like being really adventurous)
Melt the sugar and margarine together in a pan until the sugar is dissolved and
the mixture becomes light and fluffy. Beat in eggs, one at a time, adding in a
bit of flour as you go. (Make sure the sugar and margarine mixture aren't too
hot when you wack the eggs in. You don't want poached eggs!)
Add the remaining flour with the baking powder and spices and mash those bananas
into the mixture.
Spread the mixture into a lightly greased and lined shallow pan and bake in the
oven for approx. 20-30 minutes. Check the middle with a toothpick, as you would
check any cake. Cook on gas mark 5, or 190C.
Eat the banana cake and say "Yumm".
